Spicy Hummus

The sun is out again after a week of wet and cold weather, so  it’s lovely to be out in the garden again. I am just back from 30 minutes sunbathing, lazing around in the garden to stock up on my Vitamin D! One kid in bed and the other one cycling with friends outside. It feels so good to enjoy a bit of free time and peace and quite. I am  writing from my conservatory  and as as you can imagine it is boiling in there, so  I will make this post very short! As it’s too hot to cook today we had a nice and light lunch. I will post  a pic later but part of it was this lovely spicy hummus. Whizz up in less than 5 minutes and oh so tasty. 5   Enjoy with toasted pitta bread and veggie sticks. Off to the garden again.

Spicy Hummus

Ingredients

  • 1 can Organic Chickpeas
  • 2 tablespoons Lemon Juice
  • 1 tablespoon Tahini
  • 1 clove Garlic (minced)
  • 1/4 cup Water (reserved from the can of chickpeas)
  • 2 heaped teaspoons Harissa
  • Salt & Pepper

Directions

Blend until smooth.
Check seasoning and add a drizzle of extra virgin olive and a sprinkle of smoked paprika if desire.
